Recipe - Flaky scallion pancake with plum sauce
Flaky scallion pancake is a famous snack that is pan seared crunchy flaky outside and soft inside. Along with the plum sauce you can also add an egg, hoisin sauce and chili oil. It is a simple dish that you can make it at home!
Ingredients:
Scallion 100g
AP Flour 400g
Boiling Water 220g
Water 80g
Salt 1/2 teaspoon for the dough, 1T for the scallion
Oil(neutral) enough to coat the dough

1. scallion chopped and mixed with 1T of salt
2.Pouring the boiling water into flour and 1/2 t salt, mix with low speed.
3.Add room temp. water mix with medium speed till smooth. Let it set for 20 mins. The dough should be sticky.
4.Portion the dough into 10 servings, 70g each. Make it into a ball and add oil.
5.On a oiled surface, sheet the dough out thin, its okay to break it.
6.Stack the dough lengthwise into rectangular as the 1st picture showing on the bottom, and roll it into a ball as shown on picture 2.
7.Roll the ball to 0.25 inch thin and oil the pan, cook.
8.Once it looks transparent, about 3 mins, flip and cook for another 3 mins or until it's golden.
9.You can either use your hand or two wooden spoon to push them into center to create flakiness.
10.Garnishing with the scallion and soy sauce or hot sauce and serve it hot !
11.If you want add an egg, after cook the pancake, add oil to the pan and add an egg, place the pancake on it right away, and cook for 2-3 mins. You can also add anything in it to make a scallion pancake omelet or wrap something into a Chinese burrito!!
